Easy Miso Ramen

We can’t think of a better way to warm up from the inside out than a nourishing bowl of steaming hot noodle soup, and this Easy Miso Ramen has all the ingredients to make it a hit with the whole family!

Easy Miso Ramen (serves 4)

Ingredients:
200g dried rice vermicelli noodles
600g regular firm tofu (see note below) or 200g chicken breast, sliced
300g Chinese cabbage (wombok), or other Asian green leafy vegetable, sliced
2 tablespoons white (or shiro) miso paste
1 tablespoon soy sauce
20g dried nori, optional
Toasted sesame oil
Toasted sesame seeds, to serve

Method:

  1. Bring a large saucepan of water to the boil. Drop in the rice noodles and cook on medium heat for 4 minutes. Drain the noodles well, then portion out into four waiting soup bowls.

  2. Pour 800ml of water into a large saucepan, and bring to the boil. Turn down the heat to medium and add the tofu/chicken and the vegetables. Simmer for 5 minutes.

  3. Measure the miso paste and soy sauce into a small bowl. Pour in 2 tablespoons of water and mix to form a smooth paste. Stir this mixture into the saucepan, lower the heat and simmer gently for another 2 minutes.

  4. Divide the tofu or chicken and vegetables amongst the four bowls, drizzle over a few drops of toasted sesame oil, then carefully pour some of the hot miso broth over top. Sprinkle with dried nori, if using, and toasted sesame seeds to garnish.

  5. Serve steaming hot!

Did you know? Miso is a fermented food so it contains lots of probiotics (good bacteria). Therefore, once you’ve added miso paste to a recipe, be sure to only simmer gently and not boil. You want to keep those friendly bugs alive and kicking!
