Minestrone Soup

Soups are the best way to warm up on a chilly winter’s day. This Minestrone Soup is easy to make and has all the vegetable and legume ingredients within to satisfy and nourish!

Minestrone Soup (serve 4)
Ingredients:
1 tbs olive oil
1 onion, chopped
2 cloves garlic, finely chopped
500g jar Leggos Classic Tomato Pasta Sauce
1 tsp dried thyme
½ tsp salt
2 x 400g tinned red kidney beans, drained
500g sliced frozen green beans 
Optional: chopped parsley, to serve

Method:

  1. Heat the oil in a saucepan over medium heat.

  2. Add the chopped onion and fry until softened and lightly golden.

  3. Add garlic, pasta sauce, oregano and salt, and bring to a simmer.

  4. Add the drained red kidney beans, followed by the frozen green beans and stir to combine. 

  5. Bring to a simmer and cook on low heat for 10-15 minutes.

  6. Serve warm with fresh parsley sprinkled on top.
