Creamy mustard chicken with green beans

Serves 2

Ingredients

1 tbsp olive oil

4 bone in thigh cutlets, skin removed

2 cloves garlic, sliced

1 tsp thyme leaves

3/4 cup vegetable stock

1/2 tbsp seeded mustard

1 tbsp Dijon mustard

1/4c creme fraiche

1/2 can (200g) cannellini beans, drained and rinsed

170g green beans, tops and ends removed

Method

Heat oil in a non-stick fry pan over high heat. Add chicken and cook for 4-5 minutes each side, until a golden crust forms (chicken does not need to be fully cooked through at this stage). Remove chicken from pan.

Turn heat to medium. Add garlic and thyme leaves and cook for a further minute until fragrant. Add vegetable stock, mustards and crème fraiche. Stir well.

Add cannellini beans and chicken back in. Turn heat to low, cover with a lid and allow to cook for 7-10 minutes, until chicken is cooked through. Before removing from the heat, mash half of the beans roughly with your spatula. This will help thicken the sauce. 

Blanch green beans in a pot of rapidly boiling water. Divide among two plates and serve with chicken.
