ASIAN EGG ROLL RECIPE

Need a quick hit of protein? Asian Egg Rolls are the twist on the omelette you’ve been waiting for. With a dash of toasted sesame oil and nutty sesame seeds, you will have an all-natural protein serve inside of 5 minutes. Serve with lightly steamed greens and soba noodles (choose 100% buckwheat for an entirely gluten-free meal). Great for kids too!

Asian Egg Rolls (Serves 1)

Ingredients:

2 eggs
¼ cup skim milk
Pinch of salt
Few drops of toasted sesame oil
Spray oil, for cooking
Black and white sesame seeds, toasted, for sprinkling
Cocktail sticks/toothpicks for serving

Method:

  1. Whisk eggs in a bowl. Stir in the milk, salt and sesame oil.

  2. Spray a 20cm non-stick frying pan with oil and heat on medium heat.

  3. Pour in the egg mixture, swirl to evenly coat the bottom of the pan and leave to cook on low heat for 4 minutes, or until egg is just set on top.

  4. Flip the omelette over and cook for 2 more minutes on the other side.

  5. Transfer the omelette onto a plate. Roll it up, then slice cross-wise into 8 pieces and insert a cocktail stick or toothpick into each piece to secure it. 

  6. Sprinkle with toasted sesame seeds, if desired.
