Easy Peasy Cheesy Frittata

We all know that eggs are a great source of protein, but did you know that they are rich in many other important nutrients too? One egg provides 40% of your daily Vitamin D requirements, 25% of your daily folate requirements, and 20% of your daily selenium requirements. So here’s a delicious recipe that will give you all of those benefits!

Easy Peasy Cheesy Frittata (serves 4)
Ingredients:
8 eggs, lightly beaten
1 cup lite milk
1 sweet potato, peeled and diced into small cubes
1 large red capsicum, diced into small cubes
1 large zucchini, diced into small cubes 
1 cup frozen peas, thawed
200g reduced-fat feta, diced into small cubes
1 teaspoon salt
Pepper, to taste

Method:

  1. Preheat your oven to 180°C.

  2. Mix the eggs, milk, salt and pepper together in a large bowl.

  3. Arrange the sweet potato, capsicum, zucchini, peas, and feta evenly over the base of a greased 20cm x 30cm baking dish.

  4. Pour over the egg and milk mixture.

  5. Bake for 45-50 minutes, or until the egg has set.

  6. Cool for 10 minutes before slicing into 8 pieces to serve.

Nutrition information per serve: energy 1540kJ, protein 32.2g, total fat 17.5g, saturated fat 8.3g, carbohydrate 18g, sugars 11.2g, sodium 1100mg
