VEGAN SPAG BOWL RECIPE
Ingredients
1 clove of garlic (diced)
Small handful of fresh oregano (diced)
1 onion (diced)
400g of pea based mince
1 tbsp olive oil
1 can of diced tomatoes
A splash of red wine
Spaghetti Pasta
Method
Bring a saucepan of water to the boil and add the pasta.
In a large frying pan over a medium heat add the olive oil. Once warm add the onions and cook until golden brown.
Add the pea based mince and cook until browned.
Add the diced tomatoes, garlic and red wine, bring to the boil, before leaving to simmer for 5-10 minutes or until the tomato mixture begins to slightly thicken. Add the oregano.
Once the pasta is al dente, remove from the pot and drain.
Serve immediately, plating the pasta first, and adding the mince and sauce on top. Serves 2.
(For a non-vegan option, add some grated parmesan.)
